Woman shares hack for extra crispy croquette-style potatoes

A crispy-yet-fluffy potato is a culinary delight.

Whether spuds are roasted, sautéed in a saucepan or fried, there are all kinds of ways to achieve this dreamy combination.

But a chef has now shared a new five-step method to get perfectly crispy croquette-style potatoes every time – and her technique may surprise you.

Montana, behind the TikTok account @monmackfood, has revealed that she grates her tatties to achieve a crispy layered end result.

In her video detailing the method – which has now racked up 4.3 million views – Montana explains you should start by peeling and grating your potatoes before frying the spud strands in olive oil and salt – for around five minutes in total.

She then takes them off the heat, drops them in a glass container lined with cling film, and puts them in the freezer to set for a few hours.

Then, once they are cool, Montana removes the frozen block from the container and chops it into small squares – before tossing in cornflour.

After, she adds these potato squares to a pan of hot oil (she suggests a neutral-flavoured one, like the vegetable variety) and deep fries for five to seven minutes, before draining on some kitchen paper and seasoning with salt.


Montana explains the grating technique works well as it helps the potato bits stick together when frying.

Speaking to the Daily Star, she said: ‘You want a starchy potato so all the strands of potato stick together and don’t fall apart when you fry them. It’s best to get a cheese grater for the job.

‘You technically could dice them really finely with a knife but it would take ages.’

Montana adds that the dish takes around 2-3 hours to prepare – but is worth it if you want perfect potatoes every time.
