Instructions

To begin, wrap your garlic in a square of kitchen foil and rub it all over with olive oil. Scrunch up the garlic in the foil and cook in the oven. Cook for around 20 to 25 minutes until the garlic is soft when pressed on.

Lightly sear around the middle of each potato with a knife. Once boiled, the skin will just come off and you will not have to peel them.

Place the potatoes in a pot and boil for around 15 minutes until tender.

Transfer the potatoes to a colander and drain all the water from them.

Return to a pot and mash either using a potato masher or an electric whisk.

In a small saucepan, heat up your milk and pour all over the potatoes.

Place the potatoes on a low heat and add the salt and chopped chives. Mix thoroughly together.

Once the garlic is cooked, squeeze the roasted garlic over the pot and the garlic cloves should easily come out like a paste. Add your garlic cloves and the feta cheese to the mashed potato mixture.

Mix the mashed potatoes thoroughly and add in your butter. Your perfectly flavoured mashed potatoes are now ready to eat.
