How to make Biscoff cookies with just two ingredients

With restrictions easing, we don’t have as much time for baking as we did during lockdown.

But if it’s a hobby you enjoyed, there’s no need to give it up.

These cookies need just two ingredients and take just over 15 minutes to make.

All you need is some Biscoff spread and flour for the dough, though you can add chocolate chips, nuts or other toppings if you have some.

Creator Andrea Soranidis, aka The Petite Cook, explains on her blog: ‘It was a rainy afternoon, I basically had Biscoff spread at home but I was craving the cookies *story of my life*.

‘According to the Lotus website, they bake the cookies and then crush them to turn them into their irresistible spread. So, I thought, well, maybe I can revert them back into their cookies form.


‘I just added a bit of extra flour to help the magic, et-voila, 10 minutes later, I have my cup of tea in one hand and 2-ingredient Biscoff cookies in the other!’

As Biscoff spread is vegan and you don’t need to add any eggs or dairy, the cookies are suitable for anyone on a plant-based or dairy-free diet.

Andrea recommends using the smooth version of the spread to get the consistency right.

The recipe, which you can read in full here, requires you to get your hands dirty, mixing the two things together in a bowl.

Once it’s worked enough, it should form a soft dough, which you can then roll into balls and bake.

After cooking and allowing them to cool completely on the baking sheet (an important step as they will be soft when hot), they’re all ready to eat.

Andrea says her recipe makes six cookies, which makes it ideal if you just want a sweet treat, but you can double it up if you’re cooking for more people.
