THERE'S NOTHING worse than getting home after a long day at work only to realise you need to make dinner for the family.

It's even worse if your kids are fussy eaters and you just want to put your feet up rather than worry about who's eating what.

And Air fryer expert – Jen Harrison, from Durham, England knows exactly how tricky midweek dinners can be with two small children.

As a working mum with two young daughters, Jen reveals she doesn't get much time to cook and loves using her air fryer to whip up hassle-free meals even her kids' love.

She adds: "Air fryers are so convenient and quicker than other cooking methods, we also use a two-drawer air fryer which is ideal when cooking two different things for fussy children."

Here she reveals to Fabulous five weekday dinners that are bound to go down well with all the family without spending hours cooking in the kitchen.

Chicken Parmo & Tinned Potatoes

Ingredients

1 tin of New Potatoes

Sprinkle of Salt/Pepper/Paprika

Glug of Olive Oil

Breaded chicken breast

Hendersons Relish

Handful of Mild Cheddar

25g Butter

25g Plain Flour

½ pint of Milk

Handful of mild cheddar cheese

Sprinkle of garlic Powder

Method

Chop your tinned potatoes into smaller pieces in a bowl and mix with salt, pepper, paprika, and olive oil until they are coated.

Pop them into the Air fryer at 200 degrees for 20 minutes-ensuring you give them a shake during cooking.

Place your breaded chicken in the air fryer at 190 degrees for 14 minutes.

Whilst your chicken is cooking make your sauce by adding the butter to a pan and melt on a low heat, then remove from the heat and add the flour and stir until it makes a paste.

Place back on the hob and gradually add the milk and stir continuously until it thickens then add a handful of cheese, sprinkle of salt and pepper and garlic powder to the mixture and mix until smooth, then remove from the heat.

After 8 minutes add the sauce to the breaded chicken in the air fryer (enough to generously cover the chicken) and add the cheese (add as much/or as little as you prefer) and pop back in to continue cooking.

After 12 minutes open the air fryer and pop a couple of splashes of Hendersons relish on top of the cheese and cook for the remaining 2 minutes then serve.

Steak & Veg

Ingredients

1 Sirloin Steak

Seasoning – salt, pepper, and a splash of Soy Sauce

125g Asparagus

Handful of Cherry Tomatoes

Method

Place the veg in the air fryer.

Season your steak and vegetables with salt, pepper, and soy sauce.

Air Fry at 200 degrees for seven minutes, halfway through turn your steak over so it's evenly cooked and then serve.

Breakfast Muffin

Ingredients

100g sausage meat

1 frozen hash brown

1 medium egg

2 slices of cheese

1 toasting muffin

Handful of mushrooms for the side

Method

Make a ball out of your sausage meat and then flatten it into a patty shape.

Place the sausage patty, hash brown, and mushroom in the air fryer and air fry these for 15 mins at 200 degrees.

Meanwhile, crack an egg into a silicon Yorkshire pudding tin or silicon cupcake mold.

Air fry this at 180 degrees for 8 to 10 minutes (depending on how runny you like your egg).

Place the Muffin into the air fryer for 200 degrees for three minutes then serve.

Chicken and Chorizo

Ingredients

250g diced chicken

1 chorizo ring

100g cherry tomatoes

1 red onion

1 ball of mozzarella

Handful of Spinach

Method

Air Fry diced chicken for 10 minutes at 200 degrees.

Chop your onion and chorizo into small chunks and add to the chicken and cook for a further 10 minutes with the chicken.

Chop your tomatoes into halves and cut your mozzarella up into roughly 1cm wide pieces.

Once cooked add the Spinach, chopped tomatoes, and mozzarella and air fry for a further 4 minutes at 200 degrees then serve.

Chicken Kebabs and Chips

Ingredients

400g diced chicken

1 red onion

1 red pepper

1 yellow pepper

1 courgette

6 closed cup mushrooms

2 glugs of olive oil

2 tbsp Cajun spices

2 tbsp salt & pepper

1 tbsp Garlic Powder

4 white potatoes

Method

Soak some wooden kebab skewers in water for 10 minutes/or use stainless steel skewers.

Chop your potatoes into slices and then chop again to make them into chip shapes and season with salt, pepper, and olive oil.

Air fry at 180c for 20 minutes.

While the chips are cooking chop your red/yellow peppers, mushrooms, and onions into chunks, and courgette into 1cm slices.

Place the vegetables in a bowl with the chicken and season with Cajun spices, garlic powder, salt, pepper, and a good glug of olive oil and mix all together.

You then need to layer your vegetables and chicken onto the skewers, you should get around 6 kebabs per portion.

Place the kebabs in the air fryer and cook at 190 degrees for 15 minutes then serve.
