I'm a 60-year-old Sports Illustrated Swimsuit model – here's how I stay in the best shape of my life | The Sun

YOU’VE probably heard in the past how 60 is the new 40 – and if you needed more proof, just talk to Kathy Jacobs.

Kathy may have celebrated her 60th birthday, but she’s in the best shape of her life and proud to pose in her bikini.

Kathy, who comes from California in the US, always dreamed of making a splash in the modelling world and began working in the industry in the 80s.

However, after struggling to make waves, she called it quits – and didn’t think she’d ever return.

But when she reached her mid-fifties, Kathy decided to give it one final try, and hasn’t looked back.

Since, she’s landed commercials modelled in her bikini for huge American sports magazine – Sports Illustrated – and even appeared in similarly skimpy swimwear for a video for US rock band Green Day.

In an interview with Bored Panda, Kathy explained: “I was a model in the ’80s in NYC and then did some stuff here and there in LA.

“But I had given up and got a minimum wage job sweeping the floor at a Drybar and decided to give it one last shot about a year and a half ago.

“I started self-submitting myself for modelling and acting jobs and got quite a few [of them].”

Kathy, who can also be found on Instagram under the handle @ageisbeauty, now works as a model and actress and has her own agent after securing a string of successful campaigns and jobs.

But how does the glam 60-year-old maintain her figure and manage to look decades younger?

In the interview, she explained that while she’s not a “diet expert”, she overhauled her eating habits around six years ago as she was pre-diabetic.

She cut out meat and sugar from her diet and will only have fish a couple of times a week.

And when it comes to carbs, she’s not a fan of bread, pasta, rice, or white potatoes and prefers to tuck into sweet potatoes.

The model also shared what she eats on a typical day, starting off with a breakfast of a vegan protein smoothie and meatless sausages, or eggs with cheese and tomatoes.

Lunch time is all about salads, including beans and cheese for added protein, while her favoured snacks are Lilly’s sugar-free chocolate chips and peanut butter cups.

To round off the day, Kathy said that she often substitutes pasta with spaghetti squash, which she will often serve with pesto or a tomato sauce.

Opening up about some of her favourite recipes, Kathy continued: “I drink lots of almond milk because I use it in my coffee and smoothie every day.

“I eat a lot of almond flour crackers. I also make ugly almond flour muffins sweetened with stevia or sugar substitute.”

Meanwhile, she also enjoys working out up to four times a week, and said she loved gym F45 and taking part in belly dancing classes

On top of this, Kathy is also a hugely positive speaker and encourages other women to embrace their age and stand proud.

She wrote in a recent Instagram post: “I am invincible, not invisible.
