On April 21, Garten shared a photo of her roast chicken with vegetables on Instagram.

“It doesn’t have to be Friday night to make Roast Chicken with Spring Vegetables! It’s the perfect one-pan dinner,” she wrote in the caption. “Put the chicken, vegetables, and herbs in the oven and add the asparagus for the last 10 minutes. Dinner couldn’t be easier than that! Garten’s “GoToDinners” hashtag hints that she will include this recipe in her upcoming book, which she teased in a March 21 Instagram post.

How to make Ina Garten’s roast chicken with spring vegetables

Garten is well-known for her delicious roast chicken (which is often called engagement chicken for its magical powers). The recipe is easy to pull together and, once it’s in the oven, there’s plenty of time to relax while it cooks.

Garten pats the chicken dry and places it in a roasting pan then sprinkles the cavity with salt and stuffs it with lemon and sprigs of thyme and rosemary. She ties the chicken legs together with string, tucks the wings underneath, and brushes the outside with butter. She sprinkles generously with salt and pepper.

For the vegetables, Garten combines carrots, potatoes, onion, garlic, olive oil, salt, and pepper, then adds the vegetables to the pan and adds sprigs of thyme and rosemary.

She roasts the meal in a 425 degree Fahrenheit oven for 20 minutes, reduces the heat to 350 degrees, and roasts it for 40 to 50 minutes, tossing the vegetables occasionally.

When the chicken breast reaches 165 degrees and the thigh is 175 degrees, she moves the chicken to a carving board and lets it rest, covered loosely with aluminum foil.

Garten tosses asparagus with the vegetables in the pan and roasts the veggies for 10 to 12 minutes.
