Hasselback potatoes make a delicious side dish, with their cuts and ridges making for a tasty mix of crispy and soft.
One home cook has shared an even easier way to make perfect hasselbacks, with some added ingredients to wow any dinner party.
On the Slow Cooker Recipes Australia Facebook group, a woman called Belinda posted her recipe, which will allow you to do the prep and leave the slow cooker to do its thing.
After making the cuts in the potato, she added bacon, chives, and cheese, but you could customise with any other ingredients in your fridge (although it’s best to keep the cheese in for that melty goodness).
The recipe is as follows:
- Make lots of vertical cuts in your potatoes, stopping just before the bottom. If you put your potato in a wooden spoon, this can help guide the knife to the right spot.
- Place your bacon (or ham, or whatever else you’re using) into the slits.
- Line your slow cooker with baking paper and put your potatoes in.
- Top with cheese, bacon, and chives (again, or whatever ingredients you prefer) and season with salt and pepper.
You then put your slow cooker on high, stick the lid on, and cook for around three hours.
This should be enough time for the hasselbacks to become soft in the middle and crispy on the outside, with your cheese melting to the perfect consistency.
Belinda’s extra tip is to wrap the lid of the slow cooker in a clean tea towel, which absorbs any moisture released from the pot and helps with crispy skins.
Other members of the group clearly agreed, with comments and likes pouring in for the simple yet effective recipe.
