There are two schools of thought on whether pickles are kosher for a keto-friendly diet: absolutely yes and definitely no. There are merits to each side of the debate (though we believe pickles are keto!), both of which just want you live your best low-carb life.
First, the argument for pickles being keto: Pickles are indisputably low-carb, which is the primary foundation of the diet itself. In fact, some brands of pickles allow for a zero-calorie, 1-gram of carbs intake per serving. Presumably that changes based on how much sugar goes into your pickle recipes, but that minimal carb aspect is standard across the board.
On top of that, pickles make for a great snack when dipped in other keto-friendly things like ranch, bleu cheese, and/or thousand island dressings. In fact, those combinations are what lead many people to classify pickles as one of the most convenient and delicious keto snacks.
Another reason keto fanatics are a fan of the sour staple is because when you first ease into ketosis, the body has an adjustment period that includes…diarrhea. A lot of diarrhea. When you’re depleted in that way, it’s essential you stay hydrated. Electrolytes help with hydration. Pickle juice is packed with electrolytes!
As far as the counterargument, some believe a real keto diet isn’t one that includes any kind of lectins. For those unfamiliar with lectins, they’re proteins found in plants that can cause inflammation and weight gain. They just so happen to be found in cucumber seeds which don’t disappear when you pickle the veg.
That said, you can always make your own pickles using seedless spears of cucumbers, rather than pickling them as chips.
